For the Salad:
300 g Watermelon, cubed
1 Cucumber, cubed
1 Small Onion, sliced
200 g Feta Cheese, crumbled
1 Bunch Mint
10-12 Walnuts, chopped
For the Dressing:
2 Tbsp. Pepperwicks BBQ Sauce
1 Tbsp. Olive oil
1 Tbsp. Red Wine Vinegar
½ Tbsp. Honey
¼ tsp. Chilli Powder
Salt, to taste
- In a small bowl, whisk together the BBQ sauce, olive oil, vinegar, honey, chilli powder and salt. Set aside.
- In a separate bowl, add the watermelon, cucumber, onion, walnuts and mint leaves. Drizzle the dressing over the salad ingredients and mix well.
- Garnish the salad with fresh mint leaves and crumbled feta cheese.
- Serve it chilled and enjoy its delightful flavours!
- You can replace the Red Wine Vinegar with White Vinegar or Apple Cider Vinegar.
