2 Eggs
2 Tbsp. Pepperwicks Burnt Chilli Oil
Pinch of Salt
A slice of Bread or a bowl of Rice/Noodles (optional)
- Heat the Burnt Chilli Oil in a non-stick pan over a medium-low heat.
- Once the oil has been brought to heat, crack the eggs directly into the pan and season the yolk with salt.
- Cover the pan with a lid to fry the eggs until the edges are golden and crispy and the whites are puffed and bubbly.
- Tilt the pan on an angle and scoop up the oil with a teaspoon to pour over the whites to ensure they are fully cooked.
- Remove the eggs from the pan and top over a toasted slice of bread. It also works well over a bowl of rice or noodles.
- Go ahead and garnish the eggs with some green onions.
- Keep a close eye on the yolks while cooking to ensure they don't overcook. You want a runny, silky yolk when cutting into the egg.
